"Hands-on-Grilling " with chef John Ash

Thursday, July 1st

Summer is the time to get outside and grill and John will lead this hands-on class featuring several of his favorite grilled recipes.  Definitely ribs and shrimp will be on the menu along with something done in a hobo pack.  Grilled pizza will also be on the menu which is a simple technique that everyone should know how to do.  We'll even do a little smoking of something fun.  Class is limited to 20 participants.  Interesting wines and other drinks that go with grilled foods will be served to wash it all down as we sit down and enjoy the fruits of our labor! $125.00 inclusive

WEEKEND EVENT - VINTNERS INN

"LIVE FIRE UNIVERSITY " with chef John Ash

July 14th - 16th (can Include overnight accommodations)

In this two-day hands on session we’ll explore the charms of cooking with live fire in various guises including on the grill, in the wood fired oven as well as the possibilities of using fireplaces, pits and campfires.  This is an opportunity for both beginning fire masters as well as old pros to come together and share in this primal celebration!  Among other things we will:

• Learn to use (or use better) various tools for fire cooking including grills, wood fired ovens, Green Eggs, La Caja China and the like

• Develop skills with both cold and hot smoking

• Learn the best uses for high heat grilling versus low heat barbecuing

• Explore the techniques and flavor contribution of smoke roasting

• Explore other direct fire and heat techniques such as hobo packs, rotisserie and spit cooking

• Taste and develop a better understanding of wines and other beverages that can best match to fire cooked foods.
